Keto Shrimp Scampi

Ingredients:

1. 1 pound of raw shrimp, peeled and deveined

2. 3 tablespoons of butter

3. 3 cloves of garlic, minced

4. 1/4 cup of chicken broth

5. 1/4 cup of dry white wine

6. 2 tablespoons of fresh lemon juice

7. 1/4 teaspoon of red pepper flakes

8. Salt and pepper to taste

9. 2 tablespoons of chopped fresh parsley

10. Zucchini noodles or cauliflower rice, for serving


Instructions:

1. In a large skillet over medium heat, melt the butter. Add the garlic and cook until fragrant, about 1  minute.

2. Add the shrimp to the skillet and cook until pink and cooked through, about 2-3 minutes.

3. Remove the shrimp from the skillet and set aside.

4. To the same skillet, add the chicken broth, white wine, lemon juice, and red pepper flakes. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce has reduced by half.

5. Add the shrimp back to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.

6. Serve the shrimp scampi over zucchini noodles or cauliflower rice, and sprinkle with chopped                 parsley. Enjoy!
